With the arrival of Chef Christophe Scheller, the iconic restaurant at Hôtel du Palais reinvents itself to offer guests an exceptional culinary experience, inspired by local products from the Pays Basque. "Together, I want us to continue to write the story of La Rotonde which has always won the hearts of guests from Biarritz, France, and abroad," said the Chef on taking office. "Foie gras" of duck confit, Asparagus from the Landes, Fillet of Beef Rossini, line-caught Hake "à la grenobloise", Suzette-style pancake, Chocolate Mousse by the spoon… From starters to desserts, the menu sublimates classics of French gastronomy by highlighting short-circuit, seasonal products.
At La Rotonde, tradition complements modernity: "With Pastry Chef Aleksandre Oliver, we love to revisit certain classic desserts in modern style, giving them new life and reviving their former flavours. Thanks to our know-how and innovative techniques, we add a touch of freshness and novelty to each creation". To round off this gastronomic symphony, the sommeliers guide guests through a wine cellar book with over 1,200 references. Local treasures such as Irouléguy Brana blend perfectly with the Chef's dishes, offering pairings sometimes unexpected, but always memorable. Finally, service in the dining-room, led by Thomas Griffon, unfurls all its expertise. Flambées, carving, and on-the-spot seasonings offer experiences both visual and gustatory. For the ultimate in refinement, immaculate tablecloths and fresh flowers, with dishes served in Limoges porcelain tableware by Maison Bernardaud with silver cutlery. Service at table is embellished by copper utensils signed Mauviel. Each detail is meticulously orchestrated to create an atmosphere of tradition, elegance and excellence.
