After honing his expertise in the capital’s palatial hotels and star-rated restaurants, Christophe Scheller joined the Hôtel du Palais in 2024, where he now commands the ovens. Drawing inspiration from nature, the Chef favours simple, elegant cuisine whose authentic flavours and ingredients from the terroir are made sublime by precise cooking and traditional sauces. His promise is to offer an exceptional culinary experience, well beyond a simple meal, so that each instant spent in La Rotonde is unforgettable.
“Foie gras confit” from Les Landes, Saint-Jacques scallops baked in hazelnut butter, Simmental beef fillet with three peppers, a casserole of young pigeon… Featuring classics of high French gastronomy and produce from the regional terroir, La Rotonde proposes refined gourmet cuisine in tune with the seasons. The same goes for desserts. As well as the famous “crêpe Suzy flambée”, reinvented to pay tribute to his grandfather, Pastry Chef Aleksandre Oliver also impresses for his delicious Norwegian omelette with rhubarb. To round everything off, the cellar ledger with over 1,500 references enchants the most discerning palates and inspires the most audacious pairings.

Then investigate the selection of meat and fish dishes specially dreamt up by Chef Christophe Scheller, and the array of pastry creations signed by Chef Aleksandre Oliver to round everything off. The gastronomic restaurant at the Hôtel du Palais offers an exceptional culinary experience made even more special by service worthy of the most exclusive addresses. Each detail bears witness to dedicated expertise. Last-minute slicing, “flambées” and seasoning are executed with precision in the dining-room. Wine serving is then transformed into a captivating ritual in which guests are enchanted by the sommeliers’ expert gestures: decanting with or without a candle, service with a pipette. In an atmosphere blending tradition, elegance and excellence, the tables are adorned with immaculate cloths and fresh flowers. Chef Christophe Scheller’s dishes are presented in Limoges porcelain tableware accompanied by silver cutlery.
